Best Way To Start Your Morning... Every Morning.

One of my absolute favorite ways to start my day off is with Overnight Oats. It may sound simple and boring, but it is super easy, super healthy and a good quick bite before going to work or going out for an outdoor adventure.

Before giving you the recipe, I just want to share some health benefits of eating Overnight Oats every morning. They contain increased amounts of Resistant Starch. Resistant Starch is a natural carbohydrate that helps to improve digestion, aid in weight loss, increased feelings of fullness, and decrease in insulin spikes that can be very harmful (especially to diabetics or anyone that has issues with insulin resistance). They also contain Soluble Fiber, B Vitamins, Biotin, Iron and Zinc.

Overnight Oats are super easy! You just throw the ingredients into a mason jar, shake it up, put it in the fridge and then in the morning you just pop it open and add some toppings. It's so easy, and so fast. Having them ready first thing in the morning really helps me. My life is so busy and crazy that I often skip breakfast (and end up crashing in the afternoon because I have no energy). So, having a quick breakfast that is healthy, and starts the day off by giving my body nutrition rich fuel, really helps to keep my energy levels up all day. And you can pretty much put anything in it, so the options are endless and you won't get bored.


Basic Overnight Oats Recipe

1 Cup of Steel Cut Oats

1 3/4 Cup Almond milk

2 TBSP Honey or Maple Syrup

1 TBSP Chia Seeds (Optional)

1/4 Teaspoon Vanilla Extract (optional)



Combine all ingredients in a jar and shake it up. Put it in the fridge and the next morning your oats will be ready. This recipe makes 2 servings so in the morning you just put half of the jar into a bowl and add your toppings. Fruit, nuts, almond butter, peanut butter, spices. Whatever you want basically. Spice it up with chili, lime and mango or go with traditional flavors like blueberries or banana, it's totally up to you. Experiment, have fun and start your day with a healthy breakfast to keep you going and happy!!!
